Italian Bow Tie Pasta

My friend e-mailed this recipe to me and I tried it the other night and we LOVED it!

INGREDIENTS:
1 pkg. (16 oz) bow tie pasta
1 lb. ground Italian sausage
½ C. chopped onion
1 ½ tsp. minced garlic
½ tsp. crushed red pepper flakes (careful-doesn’t seem like a lot-but adds quite a kick!)
2 cans (14 ½ oz. each) Italian stewed tomatoes, drained and chopped
1 ½ C. heavy whipping cream
½ tsp. salt
¼ tsp. dried basil
Shredded Parmesan cheese


Cook pasta according to directions. Meanwhile, cook the sausage, onion, garlic and pepper flakes over med. Heat for 4-5 mins. or until meat is no longer pink. Drain.



Stir in the tomatoes, heavy whipping cream, salt and basil. Bring to a boil over med. heat. Reduce heat, simmer, uncovered for 6-8 mins. or until thickened, stirring occasionally.  In the meantime, cook your pasta.  I like to cook mine al dente. 



Drain pasta.



Toss with sausage mixture and garnish with shredded Parmesan cheese.



Serve and Enjoy!!!!

Meal Plan March 26th-April 9th

I would love to meal plan for an entire month again but I just don't see that working for the next two weeks. I plan on doing it for the month of April and beginning of May though as things are going to get quite hairy around here with the Marriage Conference coming up! So here is my meal plan for the next two weeks, fairly simple as we are out of town this coming weekend and it's Spring Break for the kids when we get back. Easter is going to be "non-traditional" this year, no one really likes ham all that much in my family. You can check out my other meal plans I have saved as well.

Apr.1 Easy Beef Enchiladas
2 Manicotti

4 (Easter) Beef Roast, Red Potatoes mashed up with garlic, Spinach Salad
5. leftovers
6 tacos
7 Sausage Potato Soup
8 Pasties
9 Bugers on the grill

Italian Salami Salad

1 16oz bottle Creamy Italian Dressing
16oz Rainbow Rotini cooked and rinsed in cool water
1 Green Pepper cut up
1 Onion cut up
1 8oz can can Black Olives
1/3 pound of Salami
1/3 c Parmesan Cheese

Cook the rainbow rotini, drain and rinse in cool water, set aside. Cut up Salami, Green Pepper and Onion. Combine the noodles with Salami, Green Pepper, Onion, Black Olives, Parmesan and Creamy Italian Dressing. Cover and refrigerate for a few hours before serving. If it gets a little dry, just add more dressing and mix well.

Grape Chicken Salad

1 c Chicken cooked and cut up
16 oz noodles - cooked and rinsed in cold water (I use elbow noodles)
1 c Miracle Whip
1/4 c Henri's Private Blend Tasty Dressing
1 tbsp lemon juice
2 tbsp sugar
1/2 to 1 c green grapes cut up

Cook noodles and drain, rinse in cold water. Cut up chicken and grapes and add to noodles. Combine Miracle Whip, Henri's Dressing, lemon juice and sugar with noodle mixture. Refrigerate for a few hours and serve cold.

Wow, it's been a while since I've posted! My husband and I have been quite busy, we are in charge of putting together a marriage conference so there hasn't been a lot of time for blogging of late. I am going to post a few of my favorite recipes for the summer and warm weather! Enjoy!

Sausage Potato Soup

My friend sent me this recipe because her family really loved it and she knows how picky my kids are! We tried it and it has an approval rating of 2 out of 3 kids and my husband really likes it too. He even likes to make this soup so this is one of the meals that he will prepare for us on the weekend.

1 pound smoked kielbasa
6 medium potatoes peeled and cubed
1 can of chicken broth
1 can of corn
1/2 Cup celery chopped
1/2 Cup chopped carrot
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
1-1/2 Cups milk
2/3 Cup shredded cheddar cheese

In a large saucepan, brown sausge, drain grease and set aside. In the same pan combine the potatoes, corn, broth, celery, carrots and seasonings. Bring to a boil, reduce heat, cover and simmer for 20 minutes or until potatoes are tender.
Add the milk, cheese and and sausage, cook and stir until cheese is melted and soup is heated through.
Serves 6.

Meal Plan for Feb. 19th to March 12th

A great way to save money on groceries is to make a meal plan. You can meal plan for a week, two weeks, a month or even longer. I have usually done meal plans for every two weeks but last time I did a meal plan I made a monthly plan which was really to cover 28 days instead of 14 days. It has worked out pretty well, I have definitely not been in the grocery store as often and have saved money this way. I sat down and planned out meals based on our calendar and left a few days open for leftovers or eating out. Here is my meal plan for the past few weeks:

Too Much Chocolate Cake

I found this great recipe on allrecipes.com last year and wanted to try it out but I didn't own a bundt pan. I finally received a bundt pan for my birthday last year from my mother. I was very excited! So here is a great recipe to try out, especially if you have a bundt pan laying around collecting dust.

Too Much Chocolate Cake


Ingredients
• 1 (18.25 ounce) package devil's food cake mix
• 1 (5.9 ounce) package instant chocolate pudding mix
• 1 cup sour cream
• 1 cup vegetable oil
• 4 eggs
• 1/2 cup warm water
• 2 cups semisweet chocolate chips
Directions
1.Preheat oven to 350 degrees F (175 degrees C).
2.In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water. Stir in the chocolate chips and pour batter into a well greased 12 cup bundt pan.
3.Bake for 50 to 55 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean. Cool cake thoroughly in pan at least an hour and a half before inverting onto a plate If desired, dust the cake with powdered sugar.

Easy Beef Enchiladas

Ingredients
• 1 pound ground beef
• 1 (1 ounce) package taco seasoning mix or burrito seasoning mix
• 1 (16 ounce) can refried beans
• 1 cup cooked regular long-grain white rice (optional)
• 12 flour tortillas (10-inch), warmed
• shredded Cheddar cheese
Directions
1. Heat the oven to 350 degrees F. Cook the beef over medium-high heat and drain grease. Stir the taco seasoning, refried beans, and rice. Divide the beef mixture among the tortillas, roll them up and place seam-side down into a 9x13 pan. Pour the enchilada sauce over the filled tortillas and sprinkle with the cheese.
2. Bake for 20 minutes or until hot and bubbling.
3. Garnish with sour cream, salsa or guacamole.
