Chicken Noodle Casserole

Chicken Noodle Casserole
• 2/3 cup chopped onion
• 1 garlic clove, minced
• 1 tablespoon olive or canola oil
• 1 1/2 pounds boneless skinless chicken breasts, cut into 3/4-inch cubes
• 1 (14.5 ounce) can chicken broth
• 1 (16 ounce) bag frozen mixed veggies
• 1/2 teaspoon dried savory
• 3 tablespoons butter or stick margarine
• 3 tablespoons all-purpose flour
• 3/4 teaspoon salt
• 1/8 teaspoon white pepper
• 1 1/2 cups 2% milk
• 1 1/4 cups shredded reduced-fat Cheddar cheese
• 8 ounces wide egg noodles, cooked and drained
1. In a large nonstick skillet, saute onion and garlic in oil until tender. Add chicken; cook and stir until no longer pink. Add the broth, frozen veggies, and savory. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until vegetables are tender.
2. Meanwhile, in a saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Pour over chicken mixture. Add noodles; mix well.
3. Transfer to a 3-qt. baking dish coated with nonstick cooking spray. Bake, uncovered, at 350 degrees F for 15-20 minutes or until bubbly.

I sometimes top this one with bisquick and make it more pot pie like but it's yummy either way.

Easy Beef Stroganoff

Beef Stroganoff

1 pound cube steak
1 can cream of mushroom soup
½ C. Sour Cream
½ C. Chopped onion
Brown rice or egg noodles

Cut up cube steak and sauté with onion in pan with some butter until brown. Add cream of mushroom soup, 1/3 can of water and simmer for 15 minutes. Add ½ C. sour cream and let simmer for 5 minutes. Serve over brown rice or egg noodles.

Super Easy Eclair Dessert

Éclair Dessert with Graham Crackers

2 3oz packages Instant French Vanilla Pudding*
1 8oz container cool whip
1 box graham crackers honey flavored
1 container chocolate fudge frosting

• In a large bowl, combine pudding mix and 3 cups milk; mix well. Fold in whipped topping and beat with mixer for 2 minutes.
• In a 9x13 inch baking dish, spread a layer of graham crackers on the bottom of the dish.
• Spread 1/2 of the pudding mixture over crackers, then top with graham crackers. Spread remaining pudding over crackers; top second pudding layer with another layer of crackers.
• Microwave frosting for 45 seconds, stir and then pour over the top and refrigerate.

*You can also use chocolate pudding in place of the vanilla pudding.

Chicken Rice Soup

Chicken Rice Soup
Quick Cooking

1 package long grain and wild rice (6.0 oz)
1 envelope chicken noodle soup (Mrs. Grass or Lipton)
1 C. cooked cut up chicken
½ C. chopped onion, celery and carrots
2 small cans or 1 big can Cream of Chicken Soup

I didn't include a picture of the carrots, celery and onion in with the ingredients because I usually have them already chopped up in a bag in the freezer. So here they are:

Here is how the chicken looks after being cooked and cut up:

In large saucepan combine 5 2/3 C. water, long grain rice and envelope of chicken noodle soup. Bring to a boil, cover, reduce heat and simmer 10 minutes. Stir in celery, carrots and onion, cover and simmer 10 minutes. Stir in cream of Chicken soup and chicken, cover and simmer 8 minutes.

This is great served with some warm bread or rolls.

Ravioli Casserole

Quick Cooking

1 jar Spaghetti Sauce
1 package (25 oz.) frozen cheese ravioli cooked and drained
2 C. (16 oz.) small curd cottage cheese
4 C. shredded mozzarella cheese
¼ C. parmesan cheese

Preheat oven to 350 degrees. Spread ½ C. sauce in ungreased 13x9 baking dish. Layer ½ of ravioli, 1 cup spaghetti sauce, 1 cup cottage cheese and 1 ½ cups mozzarella cheese. Repeat layer and sprinkle with parmesan and parsley. Bake uncovered for 25-30 minutes or until bubbly.

1 package quick rise yeast
16oz pizza cheese (not mozzarella but pizza cheese)
small package pepperoni
deli ham
3/4 c milk
1/4 c oil
1 tsp salt
1 tbsp sugar
4 c flour
1 can or jar of pizza sauce

Mix 1 package yeast with 1/2 c warm water. Add 3/4 c warm milk, 1/4 c oil, 1 tsp salt, 1 tbsp sugar and 4 c of flour. Spoon and knead, I just use my hands, it works the best but whatever works for you.
Cover for 15-20 minutes and let rise. Cut dough in 1/2 and roll out each 1/2 to make 2 stromboli crusts.
Cut up small package pepperoni by cutting the pepperoni into quarters, deli ham in small squares and then add 16oz pizza cheese and mix together.  Add some parmesan cheese, oregano, garlic salt or whatever other seasonings you like and mix together. Spread 1/2 of pepperoni/cheese mixture down the middle of one dough, then use the other half of your mixture for the other dough. Roll up dough by folding over each side and placing on the baking sheet seem side down, bake at 400 degrees for 15-20 minutes or until the crust is golden on top.  Slice and serve.  You can also top with pizza sauce which makes a nice moist addition to the stromboli. 

**You can add other ingredients to the pepperoni mix, green pepper, onion, mushrooms, black olives, etc. I wish I could send along a video of how to make this.***

BBQ Meatloaf

1 lb ground beef
1 egg
¾ C. milk
1 C. shredded cheddar cheese
½ C. oatmeal
½ C. onion chopped
1 tsp. salt

2/3 C. ketchup
½ C. brown sugar
1 ½ tsp mustard

Preheat oven to 350 degrees. Combine all the above ingredients in a bowl and mix together well. Place in meatloaf pan or individual muffin cups. Top with sauce and bake for 45 minutes or until the middle is cooked. Serve with mashed potatoes.

I love hosting dinners, get togethers, parties, whatever, as long as it involves food and people, I love it!  That is where the title of my blog came from, I feel that by serving them food that I prepared, I am showing them love, hence Love From My Kitchen!
